Fermented water rice from Bengal

Panta bhat is a Bengali dish of cooked rice that ferments lightly when soaked in water overnight.

Cool and refreshing, it is eaten above all in the hot summer and at Bengali New Year with onion, chili and fried fish.

Ingredients

  • Cooked rice400 g
  • Water500 ml
  • Red onion1 piece
  • Green chili2 pieces
  • Salt & mustard oilsome of each
  • Fried fish (side)as desired

Preparation

  1. Cover cooked rice with water.

  2. Let it stand overnight at room temperature.

  3. Finely cut the onion and chili.

  4. Season the rice with salt and mustard oil.

  5. Serve with onion, chili and fried fish.
