Korean red bean porridge

Patjuk is a creamy porridge of red adzuki beans, traditionally eaten by Koreans at the winter solstice (Dongji).

Small glutinous rice balls (saealsim) float in the porridge; they symbolize years of life and are said to ward off misfortune.

Ingredients

  • Red adzuki beans250 g
  • Water1.5 l
  • Glutinous rice flour120 g
  • Salt1 tsp
  • Sugarto taste

Preparation

  1. Cook the beans soft and pass through a sieve.

  2. Simmer the purée with water into a creamy porridge.

  3. Knead glutinous flour with warm water, form small balls.

  4. Cook the balls in the porridge until they rise.

  5. Season with salt and sugar, serve warm.
