Javanese vegetable salad with peanut sauce

Pecel is a Javanese salad of blanched vegetables coated in a spiced peanut sauce.

The sauce of roasted peanuts, palm sugar, tamarind and kaffir lime makes the simple dish aromatic and nourishing.

Ingredients

  • Mixed vegetables500 g
  • Roasted peanuts150 g
  • Palm sugar & tamarindsome of each
  • Bird's eye chili & garlicsome of each
  • Kaffir lime leaf1 piece
  • Saltto taste

Preparation

  1. Blanch the vegetables and drain.

  2. Grind peanuts with chili and garlic.

  3. Stir in palm sugar, tamarind and water.

  4. Mix the sauce to a thick consistency.

  5. Pour the peanut sauce over the vegetables, serve.
