Pepes Ikan

Spiced fish cooked in banana leaf

Pepes ikan is an Indonesian preparation in which fish is wrapped with spice paste in banana leaves.

The parcel is steamed and then grilled so the leaf lends its aroma to the tender fish.

Ingredients

  • Fish fillet600 g
  • Shallots & garlicsome of each
  • Turmeric & chilisome of each
  • Banana leaves4
  • Tomatoes & lemongrasssome of each
  • Lime leaves4

Preparation

  1. Work the spices into a paste.

  2. Marinate the fish with the paste and tomatoes.

  3. Wrap in banana leaves and pin shut.

  4. Steam the parcels for about 20 minutes.

  5. Grill briefly and serve.
