Mung bean dosa from Andhra Pradesh

Pesarattu is a savoury dosa from Andhra Pradesh, made from whole green mung beans rather than rice and lentils.

It needs no fermentation and is often filled with semolina upma and served with ginger chutney.

Ingredients

  • Green mung beans200 g
  • Ginger & green chilisome of each
  • Cumin1 tsp
  • Onion1 piece
  • Coriander1 bunch
  • Oil & saltsome of each

Preparation

  1. Soak the mung beans and grind fine with ginger and chili.

  2. Whisk with cumin and salt into a thin batter.

  3. Spread the batter thin on a hot griddle.

  4. Scatter with chopped onion and coriander.

  5. Cook crisp and serve with chutney.
