Pidan Tofu

Cold silken tofu with century egg

Pidan tofu is a cold Chinese starter of silky tofu and clay-aged century egg.

The dark, creamy egg and the cool tofu become a refreshing summer dish with soy sauce, sesame oil and spring onion.

Ingredients

  • Silken tofu300 g
  • Century egg (pidan)2 pieces
  • Soy sauce2 tbsp
  • Sesame oil1 tbsp
  • Spring onion & coriandersome of each
  • Chili oilas desired

Preparation

  1. Carefully turn the silken tofu out onto a plate.

  2. Peel the century eggs and quarter them.

  3. Arrange the eggs on the tofu.

  4. Drizzle with soy sauce and sesame oil.

  5. Serve with spring onion, coriander and chili oil.
