Ping Gai

Lao grilled lemongrass chicken

Ping gai is the Lao grilled chicken, marinated in lemongrass, garlic, coriander and fish sauce.

Grilled slowly over charcoal, it is enjoyed with sticky rice and a spicy dipping sauce.

Ingredients

  • Chicken (jointed)800 g
  • Lemongrass2 stalks
  • Garlic & coriander rootsome of each
  • Fish sauce2 tbsp
  • Oyster sauce & peppersome of each
  • Sticky riceto serve

Preparation

  1. Grind lemongrass, garlic and coriander root.

  2. Mix with fish and oyster sauce into a marinade.

  3. Rub the chicken and let it marinate.

  4. Grill slowly golden over charcoal.

  5. Serve with sticky rice and spicy dipping sauce.
