Maharashtrian chickpea flour dish

Pithla is a simple, everyday dish from Maharashtra, stirred from chickpea flour and water into a savoury mass.

Prized as humble fare, it is eaten with bhakri flatbread and onion, seasoned with garlic and chili.

Ingredients

  • Chickpea flour (besan)150 g
  • Onion1 piece
  • Garlic & green chilisome of each
  • Mustard seeds & turmericsome of each
  • Curry leaves & coriandersome of each
  • Oil & saltsome of each

Preparation

  1. Fry mustard seeds, garlic and chili in oil.

  2. Add onion and turmeric.

  3. Whisk chickpea flour smooth with water.

  4. Cook while stirring until it thickens.

  5. Serve scattered with coriander alongside bhakri.
