Steamed fish in spicy lime broth

Pla neung manao is a whole fish steamed over lime juice - a light, intensely aromatic dish of Thai cuisine.

The fiery-sour broth of lime, garlic and chili is poured over the fish while steaming, keeping it tender and infused.

Ingredients

  • Sea bass (whole)600 g
  • Lime juice4 tbsp
  • Garlic6 cloves
  • Fresh chili3 pieces
  • Fish sauce2 tbsp
  • Coriander1 bunch

Preparation

  1. Score the fish, place on a steaming plate.

  2. Finely chop garlic and chili.

  3. Mix with lime juice and fish sauce.

  4. Pour the sauce over the fish, steam vigorously.

  5. Serve with plenty of coriander.
