Polos Curry
Sri Lankan young jackfruit curry
Polos curry is a Sri Lankan curry of young, green jackfruit whose fibrous texture recalls braised meat.
Roasted curry spices, coconut milk and pandan give the vegetarian dish a dark, deep seasoning.

- Young jackfruit600 g
- Coconut milk400 ml
- Roasted curry powder2 tbsp
- Onion & garlicsome of each
- Curry leaves & pandansome of each
- Chili powder & tamarindsome of each

Preparation
Cut the jackfruit into pieces and pre-cook.
Fry onion, garlic and curry leaves.
Add curry powder and chili.
Add jackfruit and coconut milk and simmer.
Season with tamarind, serve with rice.
