Polos Curry

Sri Lankan young jackfruit curry

Polos curry is a Sri Lankan curry of young, green jackfruit whose fibrous texture recalls braised meat.

Roasted curry spices, coconut milk and pandan give the vegetarian dish a dark, deep seasoning.

Ingredients

  • Young jackfruit600 g
  • Coconut milk400 ml
  • Roasted curry powder2 tbsp
  • Onion & garlicsome of each
  • Curry leaves & pandansome of each
  • Chili powder & tamarindsome of each

Preparation

  1. Cut the jackfruit into pieces and pre-cook.

  2. Fry onion, garlic and curry leaves.

  3. Add curry powder and chili.

  4. Add jackfruit and coconut milk and simmer.

  5. Season with tamarind, serve with rice.
