Pork Humba
Sweet braised pork belly of the Visayas
Pork humba is a sweetish pork belly braise from the Visayas, related to Chinese hong shao rou.
Soy sauce, palm sugar, fermented black beans and banana blossom give the dish its depth.

- Pork belly700 g
- Soy sauce4 tbsp
- Palm or brown sugar2 tbsp
- Fermented black beans1 tbsp
- Garlic & bay leafsome of each
- Vinegar2 tbsp

Preparation
Sear the pork belly.
Add garlic and black beans.
Deglaze with soy sauce, vinegar and sugar.
Braise soft with bay leaf for a long time.
Reduce until the sauce is thick and glossy.
