Sweet black glutinous rice pudding

Pulut hitam is a Malay-Southeast Asian dessert of black glutinous rice cooked soft and sweetened with palm sugar.

A layer of salty-creamy coconut milk on top forms the classic contrast to the sweet, nutty rice.

  • Black glutinous rice200 g
  • Palm sugar100 g
  • Coconut milk250 ml
  • Pandan leaf1 piece
  • Salt1 pinch
  • Wateras needed

Preparation

  1. Soak the black glutinous rice.

  2. Cook soft with pandan leaf and plenty of water.

  3. Stir in palm sugar and dissolve.

  4. Warm the coconut milk with a pinch of salt.

  5. Put rice in bowls and drizzle with coconut milk.
