Sweet stuffed flatbread from Maharashtra

Puran poli is a sweet flatbread from Maharashtra, filled with a paste of chickpeas and jaggery.

It is made especially for festivals like Holi and Gudi Padwa and eaten warm, drizzled with ghee.

Ingredients

  • Wheat flour200 g
  • Split chickpeas (chana dal)150 g
  • Jaggery150 g
  • Cardamom & nutmegsome of each
  • Ghee3 tbsp
  • Water & saltas needed

Preparation

  1. Boil the chana dal soft and drain.

  2. Cook down with jaggery and spices into a thick paste.

  3. Knead a soft dough and let it rest.

  4. Roll the dough, fill with paste and roll again.

  5. Cook golden on the griddle with ghee.
