Steamed rice-coconut cylinder from Kerala

Puttu is a steamed breakfast dish from Kerala, cooked from rice flour layered with grated coconut in a tube.

The fluffy white cylinder is classically eaten with kadala curry of black chickpeas or ripe banana.

Ingredients

  • Coarse rice flour250 g
  • Grated coconut100 g
  • Wateras needed
  • Salt1 pinch
  • Kadala curry (side)as desired
  • Ripe bananaoptional

Preparation

  1. Moisten the rice flour with salt and a little water until crumbly.

  2. Layer it alternately with coconut in the puttu tube.

  3. Steam over bubbling water.

  4. Carefully push the cylinder out.

  5. Serve with kadala curry or banana.
