Puttu
Steamed rice-coconut cylinder from Kerala
Puttu is a steamed breakfast dish from Kerala, cooked from rice flour layered with grated coconut in a tube.
The fluffy white cylinder is classically eaten with kadala curry of black chickpeas or ripe banana.

- Coarse rice flour250 g
- Grated coconut100 g
- Wateras needed
- Salt1 pinch
- Kadala curry (side)as desired
- Ripe bananaoptional

Preparation
Moisten the rice flour with salt and a little water until crumbly.
Layer it alternately with coconut in the puttu tube.
Steam over bubbling water.
Carefully push the cylinder out.
Serve with kadala curry or banana.
