Rasam

South Indian tamarind-pepper soup

Rasam is a thin, spiced South Indian soup of tamarind, tomato, pepper and cumin, often enriched with a little dal.

It is considered soothing for a cold and is poured over rice or sipped as a warming soup.

Ingredients

  • Tamarind paste1 tbsp
  • Tomato2 pieces
  • Black pepper & cumin1 tsp each
  • Rasam powder1 tbsp
  • Garlic & curry leavessome of each
  • Coriander & asafoetidasome of each

Preparation

  1. Dissolve the tamarind in water.

  2. Cook down the tomato with rasam powder.

  3. Add the tamarind water and only heat, do not boil.

  4. Temper pepper-cumin and garlic in ghee.

  5. Stir in the tempering, serve with coriander.
