Rava Dosa

Crispy semolina crepe from South India

Rava dosa is a quick South Indian crepe of semolina and rice flour that needs no fermentation.

The thin batter is poured into the pan rather than spread, giving a lacy, especially crisp dosa.

Ingredients

  • Semolina (rava)100 g
  • Rice flour100 g
  • Wheat flour50 g
  • Cumin & peppersome of each
  • Ginger, chili & coriandersome of each
  • Water & saltas needed

Preparation

  1. Whisk semolina, rice flour and wheat flour with water to a thin batter.

  2. Add cumin, pepper, ginger and chili, let rest.

  3. Pour the batter thinly into the hot pan.

  4. Fry crisp with a little oil.

  5. Serve with chutney and sambar.
