Reganmian

Hot dry noodles from Wuhan

Reganmian, "hot dry noodles", are the iconic breakfast of Wuhan: alkaline wheat noodles with no broth, coated in nutty sesame paste.

They are tossed with pickled radish, spring onion and chili oil, and must be stirred quickly and eaten at once.

Ingredients

  • Alkaline wheat noodles250 g
  • Sesame paste3 tbsp
  • Soy sauce2 tbsp
  • Pickled radish3 tbsp
  • Chili oil1 tbsp
  • Spring onion2 stalks

Preparation

  1. Par-cook the noodles, drain and loosen with a little oil.

  2. Whisk sesame paste smooth with soy sauce and water.

  3. Reheat the noodles briefly and put into bowls.

  4. Coat with the sesame sauce.

  5. Add radish, spring onion and chili oil, mix at once.
