Ayam Rica-Rica

Fiery chicken from Manado

Rica-rica is a very spicy preparation from Manado in North Sulawesi; the name comes from the local word for chili.

A paste of many red chilies, shallots and ginger coats the chicken and gives it an intense, fresh heat.

Ingredients

  • Chicken pieces800 g
  • Red chilies10 pieces
  • Shallots & garlicsome of each
  • Ginger & lemongrasssome of each
  • Lime & tomatosome of each
  • Pandan & saltsome of each

Preparation

  1. Grind chilies, shallots, garlic and ginger into a paste.

  2. Fry the paste with lemongrass and pandan.

  3. Add the chicken and brown all over.

  4. Braise with a little water and tomato until done.

  5. Season with lime and serve with rice.
