Mackerel simmered in miso

Saba misoni is a classic Japanese home dish: mackerel gently simmered in a sweet miso-ginger sauce.

The miso tempers the strong fish flavour and settles as a glossy, savoury-sweet glaze over the tender fillets.

Ingredients

  • Mackerel (fillets)2 pieces
  • Miso2 tbsp
  • Ginger1 piece
  • Sake & mirin2 tbsp each
  • Sugar1 tbsp
  • Spring onionto garnish

Preparation

  1. Briefly pour hot water over the mackerel.

  2. Bring sake, mirin, sugar and ginger to a boil.

  3. Gently simmer the mackerel in it.

  4. Stir in the miso and let it steep briefly.

  5. Spoon sauce over the fish, serve with spring onion.
