Saba Misoni
Mackerel simmered in miso
Saba misoni is a classic Japanese home dish: mackerel gently simmered in a sweet miso-ginger sauce.
The miso tempers the strong fish flavour and settles as a glossy, savoury-sweet glaze over the tender fillets.

Ingredients
- Mackerel (fillets)2 pieces
- Miso2 tbsp
- Ginger1 piece
- Sake & mirin2 tbsp each
- Sugar1 tbsp
- Spring onionto garnish

Preparation
Briefly pour hot water over the mackerel.
Bring sake, mirin, sugar and ginger to a boil.
Gently simmer the mackerel in it.
Stir in the miso and let it steep briefly.
Spoon sauce over the fish, serve with spring onion.
