Pressed mackerel sushi from Kyoto

Saba sushi, also called battera, is a pressed bar sushi of marinated mackerel from the Kyoto region.

Because Kyoto lies far from the sea, mackerel was once preserved in salt and vinegar and turned into this specialty.

Ingredients

  • Mackerel fillet2 pieces
  • Sushi rice300 g
  • Rice vinegar4 tbsp
  • Salt2 tbsp
  • Kombu1 piece
  • Pickled gingersome

Preparation

  1. Salt the mackerel heavily, then marinate in rice vinegar.

  2. Cook the sushi rice and season with vinegar.

  3. Skin and debone the mackerel.

  4. Press rice and mackerel firmly together in a mould.

  5. Slice and serve with ginger.
