Fermented grilled sausage from Isan

Sai krok isan is a fermented pork sausage from the northeastern Isan region, owing its mild tang to rice fermentation.

Grilled over charcoal, it is eaten with raw cabbage, ginger, peanuts and fresh chilies.

Ingredients

  • Ground pork500 g
  • Cooked rice150 g
  • Garlic1 bulb
  • Pork casing1 m
  • Salt & sugarsome of each
  • Cabbage, ginger & peanutsto serve

Preparation

  1. Mix pork with rice, garlic, salt and sugar.

  2. Fill the mixture into the casing and tie.

  3. Ferment cool for one to two days.

  4. Grill slowly over charcoal.

  5. Serve with cabbage, ginger, peanuts and chili.
