Saikyo Yaki

Grilled fish marinated in sweet miso

Saikyo yaki is fish marinated in the sweet white saikyo miso of Kyoto and then grilled.

The marinade lends the fish a delicate sweetness and a beautifully caramelised surface.

Ingredients

  • Fish fillets (cod or salmon)2
  • White saikyo miso4 tbsp
  • Mirin & sake1 tbsp each
  • Sugar1 tsp
  • Saltsome

Preparation

  1. Stir miso with mirin, sake and sugar.

  2. Lightly salt the fish and coat in the paste.

  3. Marinate for one to two days.

  4. Wipe off the marinade.

  5. Grill golden and caramelised under the broiler.
