Balochi skewered lamb over fire
Sajji is a Balochi dish from Pakistan in which a whole leg of lamb or a chicken is slowly cooked on a skewer over open fire.
Classically seasoned only with salt and papaya for marinating, the dish highlights the pure taste of the tender meat.

Ingredients
- Leg of lamb1.5 kg
- Salt2 tbsp
- Green papaya (paste)2 tbsp
- Lemon1 piece
- Rice (side)as desired
- Chaat masalasome

Preparation
Rub the lamb with salt and papaya paste and marinate.
Thread onto a skewer.
Cook slowly all around over glowing coals.
Sprinkle with lemon and chaat masala.
Serve with rice.
