Balochi skewered lamb over fire

Sajji is a Balochi dish from Pakistan in which a whole leg of lamb or a chicken is slowly cooked on a skewer over open fire.

Classically seasoned only with salt and papaya for marinating, the dish highlights the pure taste of the tender meat.

Ingredients

  • Leg of lamb1.5 kg
  • Salt2 tbsp
  • Green papaya (paste)2 tbsp
  • Lemon1 piece
  • Rice (side)as desired
  • Chaat masalasome

Preparation

  1. Rub the lamb with salt and papaya paste and marinate.

  2. Thread onto a skewer.

  3. Cook slowly all around over glowing coals.

  4. Sprinkle with lemon and chaat masala.

  5. Serve with rice.
