Salt-Baked Chicken

Hakka chicken in a salt crust

Yan ju ji, salt-baked chicken, is a specialty of the Hakka community in Guangdong province.

A whole chicken is wrapped in paper and cooked in hot coarse salt, which seals in moisture and keeps the meat especially tender.

Ingredients

  • Whole chicken1.2 kg
  • Coarse sea salt2 kg
  • Ginger & spring onionsome of each
  • Shaoxing wine2 tbsp
  • Sand ginger powder1 tsp
  • Sesame oil1 tbsp

Preparation

  1. Rub the chicken with wine and spices, let dry.

  2. Wrap the chicken tightly in baking paper.

  3. Heat the coarse salt very hot in a pot.

  4. Bury the chicken in the salt and cook slowly through.

  5. Unwrap, joint and serve with ginger oil.
