Sambal Matah
Balinese raw shallot sambal
Sambal matah is a raw Balinese sambal of finely cut shallots, lemongrass and chili.
Hot coconut oil is poured over the mixture, waking the aromas without cooking them.

- Shallots8
- Lemongrass2 stalks
- Red chilies4
- Lime leaves3
- Coconut oil4 tbsp
- Lime juice & saltsome of each

Preparation
Cut shallots, lemongrass and chili very finely.
Slice the lime leaves into fine strips.
Mix everything with salt and lime juice.
Heat coconut oil and pour over.
Combine well and serve as a side.
