Sambal Terong
Fried eggplant in chili sambal
Sambal terong is an Indonesian dish of fried eggplant in a spicy sambal sauce.
The soft eggplant soaks up the sweet and spicy tomato-chili sauce and is eaten with rice.

Ingredients
- Asian eggplants400 g
- Red chilies6
- Tomatoes & shallotssome of each
- Shrimp paste (terasi)1 tsp
- Palm sugar & limesome of each
- Oil3 tbsp

Preparation
Cut the eggplant into pieces and fry golden.
Grind chilies, shallots and tomatoes into a paste.
Fry the paste with terasi in oil.
Season with palm sugar and lime.
Toss the eggplant in the sauce and serve.
