Sambal Terong

Fried eggplant in chili sambal

Sambal terong is an Indonesian dish of fried eggplant in a spicy sambal sauce.

The soft eggplant soaks up the sweet and spicy tomato-chili sauce and is eaten with rice.

Ingredients

  • Asian eggplants400 g
  • Red chilies6
  • Tomatoes & shallotssome of each
  • Shrimp paste (terasi)1 tsp
  • Palm sugar & limesome of each
  • Oil3 tbsp

Preparation

  1. Cut the eggplant into pieces and fry golden.

  2. Grind chilies, shallots and tomatoes into a paste.

  3. Fry the paste with terasi in oil.

  4. Season with palm sugar and lime.

  5. Toss the eggplant in the sauce and serve.
