Sambar

South Indian lentil and vegetable stew

Sambar is a South Indian stew of toor dal (pigeon peas) and vegetables, seasoned with tamarind and its own spice blend (sambar masala).

It is the indispensable companion to idli, dosa and rice, varying from Tamil Nadu to Karnataka in sweetness and heat.

Ingredients

  • Toor dal (pigeon peas)200 g
  • Tamarind paste1 tbsp
  • Sambar masala2 tbsp
  • Mixed vegetables300 g
  • Mustard seeds & curry leavessome of each
  • Asafoetida & oilsome of each

Preparation

  1. Boil the toor dal soft and mash it.

  2. Cook the vegetables with tamarind and sambar masala.

  3. Add the dal and bring to a boil.

  4. Toast mustard seeds, asafoetida and curry leaves in oil.

  5. Stir in this tempering, serve.
