Burmese semolina cake with coconut

Sanwin makin is a traditional Burmese semolina cake baked for festivals and special occasions.

Semolina is baked with coconut milk, butter and egg into a dense, lightly browned cake and scattered with poppy seeds.

Ingredients

  • Semolina200 g
  • Coconut milk400 ml
  • Sugar150 g
  • Egg2 pieces
  • Butter & poppy seedssome of each
  • Salt1 pinch

Preparation

  1. Lightly toast the semolina in butter.

  2. Add coconut milk and sugar and cook creamy.

  3. Remove from heat and stir in beaten egg.

  4. Fill into a tin and scatter with poppy seeds.

  5. Bake golden in the oven and let cool.
