Layered Filipino sticky rice cake

Sapin-sapin is a colourful, layered Filipino sticky rice cake whose name means layers upon layers.

Each layer is steamed individually and coloured and flavoured with ube, jackfruit or coconut.

Ingredients

  • Glutinous rice flour300 g
  • Coconut milk600 ml
  • Sweetened condensed milk200 ml
  • Ube extract & jackfruitsome of each
  • Sugar150 g
  • Toasted grated coconut (latik)to garnish

Preparation

  1. Stir a batter of rice flour, coconut and condensed milk.

  2. Divide into three portions and colour differently.

  3. Pour the first layer into the tin and steam.

  4. Pour layer by layer, steaming each.

  5. Serve topped with toasted grated coconut.
