Satay Ayam

Grilled chicken skewers with peanut sauce

Satay arose in Java under the influence of Arab and Indian traders and spread across Southeast Asia. The marinated skewers grilled over charcoal are ubiquitous in Indonesia.

Indispensable is the peanut sauce – creamy, slightly sweet, with a hint of heat and kecap manis. Served with rice cakes (lontong) or simply rice.

Ingredients

  • Chicken thighs, diced600 g
  • Kecap manis3 tbsp
  • Turmeric & coriander1 tsp each
  • Peanut butter150 g
  • Garlic, shallots2 each
  • Chilli & limeto taste
  • Wooden skewers12

Preparation

  1. Marinate the chicken with kecap manis, turmeric, coriander and garlic.

  2. Thread onto soaked skewers.

  3. For the sauce, heat peanut butter with kecap manis, chilli, garlic and water.

  4. Grill the skewers over charcoal or in a grill pan all over.

  5. Serve with the warm peanut sauce and lime.
