Rice noodles in satay peanut sauce

Satay bee hoon is a Teochew dish from Singapore that combines rice noodles with a satay-style peanut sauce.

Prawns, squid and vegetables go over the noodles, all doused in the sweet and spicy sauce.

Ingredients

  • Rice noodles (bee hoon)200 g
  • Peanut sauce (satay-style)150 ml
  • Prawns & squid200 g
  • Water spinach & bean sprouts200 g
  • Chili paste1 tbsp
  • Lime1

Preparation

  1. Blanch the rice noodles and drain.

  2. Briefly cook vegetables, prawns and squid.

  3. Warm the peanut sauce with chili paste.

  4. Arrange noodles and toppings on plates.

  5. Douse with the warm satay sauce.
