Sawara no Nitsuke

Spanish mackerel simmered in sweet soy

Sawara no nitsuke is a Japanese preparation in which Spanish mackerel is gently simmered in a sweet soy sauce.

Ginger softens the fishy taste while mirin and sake give the sauce its sheen.

Ingredients

  • Spanish mackerel fillets (sawara)2
  • Soy sauce3 tbsp
  • Mirin & sake2 tbsp each
  • Sugar1 tbsp
  • Ginger1 piece
  • Water100 ml

Preparation

  1. Bring soy sauce, mirin, sake, sugar and water to a boil.

  2. Add sliced ginger.

  3. Lay in the fish fillets.

  4. Simmer gently with a lid, spooning sauce over.

  5. Cook until the sauce is slightly thickened.
