Sawara no Nitsuke
Spanish mackerel simmered in sweet soy
Sawara no nitsuke is a Japanese preparation in which Spanish mackerel is gently simmered in a sweet soy sauce.
Ginger softens the fishy taste while mirin and sake give the sauce its sheen.

- Spanish mackerel fillets (sawara)2
- Soy sauce3 tbsp
- Mirin & sake2 tbsp each
- Sugar1 tbsp
- Ginger1 piece
- Water100 ml

Preparation
Bring soy sauce, mirin, sake, sugar and water to a boil.
Add sliced ginger.
Lay in the fish fillets.
Simmer gently with a lid, spooning sauce over.
Cook until the sauce is slightly thickened.
