Clear Javanese spinach soup

Sayur bening is a light, clear Javanese vegetable soup with spinach and corn.

A pinch of palm sugar and temu kunci root give the watery broth its gentle sweetness.

  • Spinach1 bunch
  • Corn cob1
  • Shallots & garlicsome of each
  • Palm sugar1 tbsp
  • Temu kunci or gingersome
  • Saltto taste

Preparation

  1. Bring water to a boil with shallots, garlic and ginger.

  2. Add corn pieces and cook.

  3. Season with palm sugar and salt.

  4. Add the spinach only at the end.

  5. Cook briefly and serve at once.
