Javanese vegetable stew in coconut milk
Sayur lodeh is a mild Javanese vegetable stew in which a variety of vegetables is cooked in a spiced coconut broth.
With tempeh, eggplant and long beans, it is an everyday, filling dish of Indonesian home cooking.

- Mixed vegetables500 g
- Tempeh150 g
- Coconut milk400 ml
- Shallots & garlicsome of each
- Galangal & bay leavessome of each
- Chili & saltsome of each

Preparation
Grind shallots, garlic and chili into a paste.
Fry the paste with galangal and bay.
Pour in coconut milk and water.
Add vegetables and tempeh by cooking time.
Simmer gently until soft, serve with rice.
