Javanese vegetable stew in coconut milk

Sayur lodeh is a mild Javanese vegetable stew in which a variety of vegetables is cooked in a spiced coconut broth.

With tempeh, eggplant and long beans, it is an everyday, filling dish of Indonesian home cooking.

Ingredients

  • Mixed vegetables500 g
  • Tempeh150 g
  • Coconut milk400 ml
  • Shallots & garlicsome of each
  • Galangal & bay leavessome of each
  • Chili & saltsome of each

Preparation

  1. Grind shallots, garlic and chili into a paste.

  2. Fry the paste with galangal and bay.

  3. Pour in coconut milk and water.

  4. Add vegetables and tempeh by cooking time.

  5. Simmer gently until soft, serve with rice.
