Indonesian beef stew in sweet soy sauce

Semur is an Indonesian braise in dark, sweet soy sauce (kecap manis), its name tracing back to the Dutch "smoor".

The pairing of nutmeg, clove and kecap manis makes the dish a legacy of the archipelago's colonial spice history.

Ingredients

  • Beef (braising cuts)700 g
  • Sweet soy sauce (kecap manis)4 tbsp
  • Shallots & garlicsome of each
  • Nutmeg & clovesome of each
  • Potatoes300 g
  • Cinnamon & saltsome of each

Preparation

  1. Grind shallots and garlic into a paste, fry it.

  2. Add the beef and brown it.

  3. Stir in kecap manis, nutmeg, clove and cinnamon.

  4. Top up with water and braise long.

  5. Cook the potatoes along until everything is tender.
