Shahi Paneer
Royal paneer curry of Mughal cuisine
Shahi paneer is a rich curry of North Indian Mughal cuisine whose name means royal.
Paneer floats in a mild sauce of tomato, cashew, cream and saffron, rounded off with cardamom and garam masala.

- Paneer250 g
- Cashews60 g
- Tomatoes & onion2 each
- Cream100 ml
- Saffron & cardamomsome of each
- Garam masala & gingersome of each

Preparation
Soak the cashews and puree with onion and tomato.
Fry the paste gently with spices.
Cook down with water into a smooth sauce.
Fold in cream, saffron and paneer.
Finish with garam masala, serve with naan.
