Royal paneer curry of Mughal cuisine

Shahi paneer is a rich curry of North Indian Mughal cuisine whose name means royal.

Paneer floats in a mild sauce of tomato, cashew, cream and saffron, rounded off with cardamom and garam masala.

Ingredients

  • Paneer250 g
  • Cashews60 g
  • Tomatoes & onion2 each
  • Cream100 ml
  • Saffron & cardamomsome of each
  • Garam masala & gingersome of each

Preparation

  1. Soak the cashews and puree with onion and tomato.

  2. Fry the paste gently with spices.

  3. Cook down with water into a smooth sauce.

  4. Fold in cream, saffron and paneer.

  5. Finish with garam masala, serve with naan.
