Layered sesame flatbread

Shaobing is a northern Chinese flatbread with a crisp sesame crust and many tender layers inside.

It is eaten for breakfast, often split and filled with youtiao, egg or braised meat.

Ingredients

  • Wheat flour300 g
  • White sesame60 g
  • Sesame paste2 tbsp
  • Five-spice powder1 tsp
  • Yeast & saltsome of each
  • Oil & malt syrupsome of each

Preparation

  1. Knead a yeast dough and let it rise.

  2. Roll out the dough, spread with sesame paste and spice.

  3. Roll up, portion and press flat.

  4. Brush the top with malt syrup and dip in sesame.

  5. Bake crisp and golden in a hot oven.
