Sweetened saffron yoghurt from West India

Shrikhand is a creamy dessert of strained yoghurt (hung curd), sweetened and perfumed with saffron and cardamom.

A specialty of Gujarat and Maharashtra, it is served chilled with puri or as the finale of a festive meal.

Ingredients

  • Whole-milk yoghurt500 g
  • Powdered sugar100 g
  • Saffron1 pinch
  • Cardamom1/2 tsp
  • Milk (for saffron)1 tbsp
  • Pistachiosto garnish

Preparation

  1. Strain the yoghurt in a cloth for several hours.

  2. Soak the saffron in warm milk.

  3. Whisk the strained yoghurt smooth with sugar.

  4. Stir in saffron milk and cardamom.

  5. Serve chilled with pistachios.
