Sien Savanh

Lao sun-dried beef

Sien savanh is dried Lao beef marinated in fish sauce, sesame and sugar and dried in the sun.

Briefly fried afterwards, it makes a sweet-salty, slightly chewy snack that pairs with sticky rice and beer.

Ingredients

  • Beef (in strips)600 g
  • Fish sauce3 tbsp
  • Sugar2 tbsp
  • Sesame2 tbsp
  • Garlic & peppersome of each
  • Oil for fryingplenty

Preparation

  1. Slice the beef thin and marinate.

  2. Scatter with sesame.

  3. Half-dry in the sun or in the oven.

  4. Briefly fry in hot oil.

  5. Serve with sticky rice and a dipping sauce.
