Sigeumchi Namul

Korean spinach side with sesame

Sigeumchi namul is one of the most common Korean banchan sides, made from blanched spinach.

The spinach is briefly cooked, squeezed dry and dressed with sesame oil, garlic and sesame into a nutty side dish.

Ingredients

  • Spinach400 g
  • Sesame oil1 tbsp
  • Garlic1 clove
  • Soy sauce1 tsp
  • Sesame1 tbsp
  • Salt & spring onionsome of each

Preparation

  1. Briefly blanch the spinach in salted water.

  2. Shock in cold water and squeeze dry.

  3. Toss with sesame oil, garlic and soy sauce.

  4. Season with salt.

  5. Serve scattered with sesame and spring onion.
