Soan Papdi

Flaky, layered Indian sweet

Soan papdi is a flaky, almost thread-like Indian sweet of chickpea and wheat flour, sugar and ghee.

Skilful pulling of the hot sugar creates the characteristic melt-in-the-mouth texture, perfumed with cardamom.

Ingredients

  • Chickpea flour100 g
  • Wheat flour100 g
  • Sugar250 g
  • Ghee150 g
  • Cardamom1/2 tsp
  • Pistachiosto garnish

Preparation

  1. Roast both flours golden in ghee.

  2. Cook a firm syrup from sugar and water.

  3. Pull the syrup through the flour mass until threads form.

  4. Press the mass flat and dust with cardamom.

  5. Scatter with pistachios and cut into pieces.
