Soki Soba

Okinawa noodles with braised ribs

Soki soba is a variant of Okinawa soba in which tender braised pork ribs crown the noodles.

The wheat noodles float in a clear broth of pork and bonito, typical of the island cuisine of Okinawa.

Ingredients

  • Okinawa soba (wheat noodles)300 g
  • Pork ribs (soki)500 g
  • Soy sauce & mirin3 tbsp each
  • Brown sugar2 tbsp
  • Bonito broth800 ml
  • Spring onion & gingersome of each

Preparation

  1. Braise the ribs soft with soy sauce, mirin and sugar.

  2. Heat the bonito broth and season.

  3. Cook the noodles and drain.

  4. Put the noodles into the broth.

  5. Top with ribs and spring onion, serve.
