Pink kokum-coconut drink from the Konkan coast

Sol kadhi is a pink drink from the Konkan coast made from kokum fruit and coconut milk.

It is drunk after spicy meals and considered cooling and good for digestion.

Ingredients

  • Kokum fruit (dried)8 pieces
  • Coconut milk400 ml
  • Garlic2 cloves
  • Green chili & coriandersome of each
  • Cumin & saltsome of each

Preparation

  1. Soak the kokum in warm water.

  2. Strain off the pink extract.

  3. Mix with coconut milk.

  4. Add garlic, chili and cumin.

  5. Serve chilled with coriander.
