Song Shu Yu
Squirrel fish in sweet and sour sauce
Song shu yu is a classic dish from Suzhou in which a fish is artfully scored and deep-fried.
The diamond-shaped cuts make the flesh curl up when fried, resembling a squirrel's tail.

Ingredients
- Freshwater fish (deboned)1
- Cornstarch150 g
- Tomato paste & vinegarsome of each
- Sugar4 tbsp
- Peas & carrotsome of each
- Oil for fryingenough

Preparation
Score the fish in a diamond pattern and coat in cornstarch.
Deep-fry crisp in hot oil until it curls up.
Reduce a sauce of tomato paste, vinegar and sugar.
Thicken with cornstarch.
Pour the sweet and sour sauce over the fish and serve.
