Squirrel fish in sweet and sour sauce

Song shu yu is a classic dish from Suzhou in which a fish is artfully scored and deep-fried.

The diamond-shaped cuts make the flesh curl up when fried, resembling a squirrel's tail.

Ingredients

  • Freshwater fish (deboned)1
  • Cornstarch150 g
  • Tomato paste & vinegarsome of each
  • Sugar4 tbsp
  • Peas & carrotsome of each
  • Oil for fryingenough

Preparation

  1. Score the fish in a diamond pattern and coat in cornstarch.

  2. Deep-fry crisp in hot oil until it curls up.

  3. Reduce a sauce of tomato paste, vinegar and sugar.

  4. Thicken with cornstarch.

  5. Pour the sweet and sour sauce over the fish and serve.
