Indonesian oxtail soup

Sop buntut is a clear, aromatic Indonesian oxtail soup with tender braised meat and vegetables.

The broth is spiced with nutmeg, clove and cinnamon; potatoes, carrots and fried garlic complete it - served with rice and sambal.

  • Oxtail (in pieces)1 kg
  • Potatoes & carrots400 g
  • Nutmeg, clove & cinnamonsome of each
  • Shallots & garlicsome of each
  • Spring onion & celerysome of each
  • Fried garlicto garnish

Preparation

  1. Boil the oxtail tender, skim the broth.

  2. Add spices and a fried shallot-garlic paste.

  3. Cook the potatoes and carrots along.

  4. Season with salt.

  5. Serve with fried garlic and celery.
