Goan pork curry with vinegar

Sorpotel is a hot and tangy pork curry from Goa with Portuguese roots, traditionally served at festivities.

Vinegar and plenty of spices preserve it, and it develops its full flavour only after a day's rest.

Ingredients

  • Pork & liver800 g
  • Dried red chilies8
  • Palm vinegar100 ml
  • Garlic & gingersome of each
  • Cumin & clovessome of each
  • Onions2

Preparation

  1. Pre-cook pork and liver and dice.

  2. Grind chilies and spices with vinegar into a paste.

  3. Fry the onions and add the paste.

  4. Stir in the meat and braise with broth.

  5. Rest overnight and reheat.
