Goan pork curry with vinegar
Sorpotel is a hot and tangy pork curry from Goa with Portuguese roots, traditionally served at festivities.
Vinegar and plenty of spices preserve it, and it develops its full flavour only after a day's rest.

- Pork & liver800 g
- Dried red chilies8
- Palm vinegar100 ml
- Garlic & gingersome of each
- Cumin & clovessome of each
- Onions2

Preparation
Pre-cook pork and liver and dice.
Grind chilies and spices with vinegar into a paste.
Fry the onions and add the paste.
Stir in the meat and braise with broth.
Rest overnight and reheat.
