Soto Banjar

Spiced chicken soup from South Kalimantan

Soto banjar is a chicken soup of the Banjar people from South Kalimantan, spiced with cinnamon, clove and star anise.

The slightly cloudy broth is often enriched with a little milk and served with rice cakes (ketupat), egg and perkedel.

  • Chicken600 g
  • Cinnamon, clove & star anisesome of each
  • Shallots & garlicsome of each
  • Nutmeg & cardamomsome of each
  • Eggs & glass noodlessome of each
  • Lime & spring onionsome of each

Preparation

  1. Simmer the chicken with the whole spices into a broth.

  2. Fry a shallot-garlic paste and add it.

  3. Remove the chicken and shred it.

  4. Prepare glass noodles and egg.

  5. Plate in bowls with broth, chicken, egg and lime.
