Soto Madura

Spiced beef soup from the island of Madura

Soto madura is a clear, yellow spiced soup from the island of Madura off East Java, traditionally with beef and offal.

Turmeric, lemongrass and lime give the broth colour and freshness; rice or lontong and a hard egg round it out.

  • Beef500 g
  • Turmeric & gingersome of each
  • Shallots & garlicsome of each
  • Lemongrass & lime leavessome of each
  • Eggs2 pieces
  • Spring onion & limesome of each

Preparation

  1. Boil the beef tender and cut into pieces.

  2. Fry a spice paste of shallots, garlic and turmeric.

  3. Add the paste with lemongrass to the broth.

  4. Return the beef and let it steep.

  5. Serve with egg, spring onion and lime.
