Sweet and sour pork ribs

Suon xao chua ngot are Vietnamese sweet and sour pork ribs, a beloved family dish.

The ribs are first boiled, then seared and glazed in a sauce of vinegar, sugar and fish sauce.

Ingredients

  • Pork ribs700 g
  • Rice vinegar3 tbsp
  • Sugar2 tbsp
  • Fish sauce2 tbsp
  • Garlic & shallotssome of each
  • Tomato paste1 tbsp

Preparation

  1. Chop the ribs into pieces and pre-cook.

  2. Sear all over in oil.

  3. Add garlic and shallots.

  4. Deglaze with vinegar, sugar, fish sauce and tomato paste.

  5. Glaze until the sauce coats the ribs.
