Spiced Malaysian oxtail soup

Sup ekor is a hearty Malaysian oxtail soup simmered long with many spices.

Star anise, cinnamon and cardamom give the broth depth, finished with fried shallots.

  • Oxtail1 kg
  • Onion & gingersome of each
  • Star anise, cinnamon & cardamomsome of each
  • Curry powder1 tbsp
  • Potatoes & tomatoessome of each
  • Fried shallots & corianderto garnish

Preparation

  1. Blanch the oxtail and rinse.

  2. Start with onion, ginger and whole spices.

  3. Simmer very long until the meat is tender.

  4. Add curry powder, potatoes and tomatoes.

  5. Serve with fried shallots and coriander.
